Automate Gmail PDF Catalog

I receive hundreds of PDFs in Gmail, all sharing the same layout. I need a hands-free way to pull every new file out of my inbox, run it through OCR so the text is searchable, and register both the document and key details (date, sender, subject line and any fields you can reliably scrape from the form) into a single spreadsheet I can open on my Mac, iPhone or iPad. Here’s the flow I have in mind: • A script watches my Gmail account, fetches each incoming PDF (past messages included), and stores the file in a cloud folder. • During that hand-off the PDF is scanned/OCR’d. • The script then appends a new row to the master sheet—Google Sheets or Apple Numbers, whichever is easier for you to automate—with the file link plus the captured metadata. I’m open on the exact stack; Python, Google Apps Script, or similar tools are all fine as long as I end up with: 1. A working, self-hosted or cloud-hosted solution that requires no manual uploads. 2. Clear setup instructions so I can re-deploy it if needed. 3. All code and credentials handed over at the end. If you’ve built Gmail-to-Spreadsheet automations before, I’d love to see a quick outline of your approach and a sample of previous work.
